If you've been around Itaewon on a weekend night, then you've likely seen the Neon colored taco truck that parks in front of the Hard Rock Cafe. Three guys, with excellent English skills, run the Taco Truck on the weekends for nightlife goers- until the wee hour of 6am.
(Who DOESNT want a taco at 6am? That's what I'm sayin)
The taco truck is very popular. Very. I think we waited about 15 minutes before it was our turn.
I checked out their menu board, but didnt see any vegetarian options. I gave them a hard time about this (jokingly), and they said they could whip me up a veggie quesidilla.
I had some serious doubts about a good veggie quesidilla coming out of a truck.
But dang y'all....
SO GOOD.
I thought about that quesadilla for a good 24 hours straight.
(Seriously, it was in my dreams)
Very fresh ingredients, some sort of creamy goodness and lots and lots of cheese.
Hands down- the best quesadilla I have ever had in my life.
(yeah, that's right- and it was made in a truck)
